Ode to the Spaghetti Squash……

Anyone who comes into my kitchen on a typical day can share with you the telltale smell of fish burning. Its just a given that there is always some sort of stinky water  critter cooking as I eat it for breakfast, lunch and dinner. All varieties as long as it’s crispy. But during the months of October through February, if you walked into my kitchen you will recognize the yellow oblong shaped spaghetti squashes perching out of the bowls on the counter. This squash, if you haven’t already tried it, should be a staple in any health conscious home.

With so few calories and even less fat per serving, the spaghetti squash is an excellent substitute for actual durum wheat pasta. Cook it in the microwave for 15 minutes (splice holes in it first or it will explode and break the bowl- trust me- this happened). Then remove seeds (I roast the seeds and snack on them later) and take out the stringy flesh – put in mixing bowl with tomato sauce and add some Butter spray( a staple I can NOT live without) – if you like you can bake for 15 minutes for added texture.

One more new in season at Costco (old) fetish comes to mind: The Pomelo…. a combination of tangerine and grapefruit. So sweet, so few calories and although a pain in the ass to peel its worth the time for a juicy treat.
Tomorrow we must discuss NUTS. Raw almonds have been my obsession but I m ever expanding my horizons.
