This is one of my favorite breakfasts that I prepare the night before so I can grab and go the next morning.
It is so easy it’s ridiculous. My only problem is that it’s so delicious that I always end up eating it while I’m preparing and have to make another for the next morning!
Ingredients (makes 2 servings):
- 2 cups 100% rolled oats
- 2 tbsp. natural peanut butter or almond butter*
- 1 cup unsweetened vanilla almond milk
- cinnamon, 1-2 dropper liquid stevia (or to taste)
That’s it! Just mix it together and leave in refrigerator overnight and grab for breakfast the next day.
Optional: skip the almond milk and use nonfat plain Greek yogurt instead- even creamier!!!
* Pay extra attention to buy ONLY 100% nut butters with no added cane sugars or palm oil. A lot of popular brands often add chemicals and sugars for processing – stay away from those. The best option is to buy freshly ground – you can even get that at Publix in the deli section.
