This is the best, easiest, recipe for those in a rush (like myself) and want to prepare dinner before they leave the house in the morning in just under 2 minutes.
- 4 Packages of Frozen cauliflower (I like to place the cauliflower in a bowl of hot water first to remove all ice particles)
- 1 bag baby carrots
- 1 bag frozen mushrooms
- 1 red bell pepper cut in quarters and seeds removed
- 1 carton low sodium vegetable broth (I like the organic Imagine brand )
Place all ingredients in a croc pot on High. Then leave for the day and when you get home it is ready to be blended with a hand mixer and served!!
This recipe is an excellent source of vitamin, D, C, K and a very good source of manganese, is anti inflammatory and loaded with antioxidants.
